Friday Night Dips
Friday night in our house is a movie night. Movie night is not complete without chips and dip. Now we dip celery, carrots, or blue chips in our dip, but you can choose whatever snack food you want. The blue chips are the most points of course, and we only eat those as a treat once in a while.
Homemade Weight Watchers Queso Dip
We use our own pictures so you know we made the recipe ourselves. We have the dishes to make it pretty and have a beautiful setup, but we wanted to show you that we actually did this in our kitchen. We want to make sure you know you can make these recipes too 🙂
Instant Pot or Stove top?
It doesn't matter if you are using an Instant Pot, a Ninja Foodi, or cooking it on your stove your are sure to love this recipe, and Friday nights will never be the same. To make this on the stove-top the directions are the same 🙂 you will cook this over medium-high heat and just follow the directions.
The Ingredients
I like to use the Rotel with the jalapenos added in but you can opt for the milder version without the jalapenos. You can also add other seasonings to modify the flavor. We add dark and smoky spice from Flat-Iron Pepper Compan for an amazing change of pace that does not add too much heat. once you try their blend of spices you may never go back to plain ole red pepper flakes again. The Cooking Process
The trick is to cook it slow enough so that the flavor from the spices gets mixed into the cheese. You want that delicious flavor in every single bite. We have perfected the time you need to cook it so that the cheese melts all the way and you get incredible flavor every time you dip a celerys tick or a carrot stick in.

Weight Watchers Friendly Queso Dip
- Yield: 4 servings 1x
Description
A low point cheese dip
Ingredients
- 2 cans of Rotel
- 1 tablespoon olive oil
- ¼ cup tapioca flour
- 3 tablespoons garlic chipotle sauce
- 2 cups fat-free cheese
Instructions
- Set your Instant Pot to saute
- Add oil and heat 1-2 minutes
- Add flour and stir
- Add garlic chipotle sauce, 2 cans of rotel and stir until well mixed
- Add cheese and stir until all of the cheese is melted
- Unplug your Instant Pot so your dip doesn’t burn
- Transfer dip to another container and enjoy.
