We love potatoes. All kinds of potatoes. My wife loves regular potatoes in all of their forms, and I and the kids like both white and my delicious Sweet Potato Bake.

Sweet Potato Casserole
Do you know the adage, happy wife happy life? I love seeing my wife smile as much as when the kids do. To keep my wife happy I made a baked potato soup that she absolutely loved and I made this Sweet Potato Casserole for myself and the girls. My wife doesn't like sweet potatoes. 🙁 But we do and we loved it so much I didn't have any left-overs to freeze for next week. Oh well, I will make some more.
Baked Sweet Potato
Sweet potatoes make a great side dish for many main courses. We have all love Ninja Foodi Turkey. Now try them with Herb Roasted Chicken or even these delicious pork chops by the Pioneer Woman on the Food Network, Sweet potatoes are a delicious treat when you want something sweet and creamy. Adding pecans or walnuts add another layer of flavor and a little crunch. I love the topping on this bake I have made some substitutions to my regular recipe to make it fewer points. But you know It is still going to put a smile on your face when you taste it.

Description
Weight Watchers Friendly Sweet Potato Bake
Ingredients
3 cups cold mashed sweet potatoes (prepared without milk or butter) 28 points
1 cup 0 calorie sweetener (3 points)
3 large eggs
1/2 cup skim milk 2 points
1/4 cup apple sauce unsweetened
1 teaspoon salt
1 teaspoon vanilla extract
TOPPING:
1/2 cup swerve brown sugar
1/4 cup chopped pecans 5 points
1/4 cup all-purpose flour 3 points
2 tablespoons cold “I can't believe it’s not butter light vegetable spread” 2 points
Instructions
- In a large bowl, beat the sweet potatoes, sweetener, eggs, milk, apple sauce, salt, and vanilla until smooth.
- Transfer to a 2-qt. baking dish sprayed with pan spray.
- In a small bowl, combine the swerve brown sugar, pecans, and flour; cut in butter until crumbly.
- Sprinkle over potato mixture.
- Bake, uncovered, at 325° for 45-50 minutes.
