1 can black beans
1 can cannellini beans
1 can diced tomatoes
16 oz tomato sauce
1 cup brown rice
1 cup quinoa
3 cups water
Pour the rice, beans, and quinoa in your instant pot with 3 cups of water. Set at high pressure for 22 minutes. Let it natural release for 20 minutes or so.
Take the top off and pour in the beans, tomatoes, and tomato sauce.
I seasoned it with a few shakes of garlic and onion powder, but it’s really up to you.
Serve with your favorite protein or on its own.
