A light, yet filling lunch
I'm always looking for quick, on-the-go lunches that are also easy to meal prep. This certainly fits the bill! While you don't want to make the keto shrimp avocado salad too far in advance, you could certainly prep the salad, olives, and avocados in advance in your meal prep containers.
If you are making this as a dinner, you can pair it with some buffalo cauliflower bites for a delicious and keto-friendly meal!
Why should you eat avocados?
Avocados are often called superfood because of how they are just packed full of nutrients. One of these babies has more than 20 vitamins and minerals! It also has a high amount of “good fat”. In addition, they don't contain any cholesterol or sodium and are low in saturated fats.
If you have ever had a Charley horse, your first thought is likely to munch on a banana. You might be surprised to know that avocados actually have 14% of your daily required amount of potassium in them, compared to the 10% a banana has in it.
Avocadoes are also full of fiber! They are an indigestible plant matter that can contribute to weight loss, reducing blood sugar spikes, and they are strongly linked to a lower risk of many diseases. That makes this shrimp avocado salad a great lunch.
If you suffer from high blood pressure or high cholesterol, several studies have shown that avocados can lower both of them.

How do shrimp rank as a keto food?
Personally, shrimp is one of my favorite foods. They are easy to cook, can be served hot or cold, fit into so many dishes. But, are they good for a keto diet?
YES!
Shrimp have zero carbohydrates, so they will not mess with your macros. This isn't true of all shellfish, but it is for shrimp. So this shrimp avocado salad is perfect for a keto diet.
Should I eat walnuts if I'm keeping keto?
Walnuts are great for both your heart and your ketosis. If you enjoy a little less than ¼ cup of walnuts, you will have about four grams of carbs. Not perfect, but not terrible either.
However, if you want to get more bang for your buck, these are the perfect nuts to crush up and put on things like salad. It will give your dish some delicious crunch for minimal carbs.

Keto Shrimp Avocado Salad

Ingredients
2 T. unsalted butter
2 cloves garlic, minced
1 lbs. shrimp, peeled and deveined
½ t. ground cumin
Sea salt and black pepper, to taste
1 large avocados, diced
3 T. extra virgin olive oil
1½ T. fresh lime juice
2 T. fresh cilantro, chopped
4 c. baby arugula
8 grape tomatoes
24 large green olives
3 oz. walnuts
1 large lime, cut into 8 wedges
Instructions
In a large skillet, melt the butter and minced garlic over medium heat. Cook for one minute while stirring frequently.
Add the ground cumin and shrimp into the skillet. Season to taste with salt and pepper and stir to combine. Cook for 2-3 minutes, or just until the shrimp changes color and starts to curl. Remove the pan from the heat and set it aside to cool.
Once cool, roughly chop the shrimp. In a large bowl, combine the olive oil, lime juice, and fresh cilantro and then add the shrimp, avocado. Season to taste with salt and pepper and gently toss to combine.
Divide the baby arugula between four plates or meal prep containers. Add one-fourth of the avocado shrimp mixture to each plate or container. Evenly divide the green olives, walnuts, and lime wedges between each serving. Serve immediately or store ni the fridge for later.
