Sometimes you find a recipe that just works no need to alter it or change anything it tastes great and makes you smile:) Her Super Easy Egg Casserole is that kind of recipe.

Super Easy Egg Casserole Recipe

This is an amazing dish that you can make ahead of time and refrigerate for breakfast on the go. It tastes great hot or cold. I prefer to reheat it but Gail likes it either way. Try it for yourself and let us know in the comments what your preference is. Gail also says she will try this with sauteed mushrooms and onions next time. I can tell you after I made this with the mushrooms and onions this dish became a favorite. It is so good my 12-year-old asks for it now.
Easy Egg Bake
I am going to see if I can get my 22-year-old daughter to make this Easy Egg Bake for her family, and update you on how they like it. I loved it so much I had to feature it on the blog. Gail's Easy Egg Bake is just that, easy, and when you add the pancakes you have a low point breakfast that will have your family sitting down at the table before it is ready, with forks in hand 🙂
Banana Protein Pancakes
The protein-rich pancakes are as delicious as the egg bake. I may be a little biased because pancakes are my favorite dish. Gail says not to make them too big because they will fall apart when you try to flip them. I used a 1/2 cup measuring cup and they came out perfect. I like that Kodiak adds protein to help me feel full longer and snack less. Protein goes a long way to helping me lose weight and feel better throughout my day. Bananas help make the pancakes moist and full of flavor. They also add potassium and magnesium. Oh yeah 🙂
If you are exercising the added potassium will help your muscles recover faster and you should have less soreness. Some soreness is good though. Here is how to make the banana protein pancakes; 1 ripe mashed banana, 1 egg, 1/4 cup Kodiak Buttermilk protein flapjack mix, Two handfuls of fresh blueberries. Mix all ingredients in a medium bowl, I use a ½ cup measuring cup and drop them onto a hot griddle. Makes 3-4 small pancakes for 2 pts. If you make them larger they will fall apart when flipping. She used Walden farms sugar-free fat-free zero calorie syrup or blueberry syrup. You can get Walden Farms syrups here

Super Easy Egg Casserole Recipe
2 cups chopped fresh spinach
6 banquet turkey sausage patties crumbled
4 oz. Velveeta shredded cheese (next time I will use kraft fat-free cheddar)
Chopped grape tomatoes as many as you would like
Trader joe everything but the bagel seasoning
Sprinkle Himalayan Pink Salt
Add all ingredients in a large bowl and combine
Pour into an 8×10 dish
Bake 350 for 20-35 minutes or until cooked and set.
Cut it into 8 large squares
2 pts. each
It is good hot or cold. 4 points for the entire breakfast. 🙂
