Chickpea and Pepper Salad

Ingredients

2 cups chickpeas
2 avocado
2 bell peppers
1 tomato
cilantro
4 Tbsp Trader Joe’s Greek Goddess dressing
4 Tbsp Trader Joe’s Avocado Tzatziki
Lemon juice


Instructions

Drain and rinse the chickpeas. Put them in a large bowl

Dice the peppers and tomato into bite-sized pieces. 

Dice the onions into small pieces. 

Dice the avocado into bite-sized pieces. 

Chop the cilantro into small pieces. 

Combine all the vegetables and cilantro in the bowl. Pour the dressing and dip on top, squeeze the lemon on top and stir to combine. 

Refrigerator for an hour to let the flavors combine.
