Blend the Batter:
- Add all ingredients to a blender.
- Blend on high until the mixture is completely smooth.
Rest the Batter:
- Allow the batter to rest in the blender while you heat up your pan or griddle.
Preheat the Pan or Griddle:
- Lightly coat the griddle with olive oil spray.
Cooking the Pancakes:
- Pour 1/3 cup of pancake batter onto the heated pan or griddle.
- Cook for 2-4 minutes or until the batter begins to bubble, and the edges brown.
Flip and Cook:
- Flip the pancakes and cook for an additional 2-3 minutes on the other side.
- Ensure you spray the pan with olive oil between each batch.
Cooling Between Batches:
- Rinse the pan with cold water every other batch to cool it off and prevent overheating.
Notes
- If your pancakes are browning too quickly (within 4 minutes), reduce the heat.
- If you notice smoke, the heat is too high.
- For optimal results, wipe the pan between every other batch for a clean cooking surface.
