Chicken has become a staple in our household. Our BBQ Chicken Strips are another creation that we would like to share with you. We meal prep our chicken in the Instant Pot to make our meals easier to put together later in the week. No grill needed for this wonderful meal, you can prepare it right in your kitchen! BBQ Chicken Strips is another Weight Watchers friendly freezer meal we stock up on.
BBQ Chicken Breast
To make our BBQ chicken strips, we took two large breasts out of the freezer that had been meal prepped on Sunday. We thawed and cut them up, then threw them in the skillet to brown. In the meantime, we made our zero point BBQ sauce. Serving this on a bed of rice is a great choice if you're following the Weight Watchers Freestyle Plan (1/2 cup of rice is 3 points). Add an ear of corn (zero points!) for a delicious finish, making it 4 points for the entire meal – and you have room for dessert! Once we finished eating, we didn't have room in our bellies for dessert, but our points bank had plenty.

BBq Chicken Strips
BBQ Chicken Strips
- 3 medium breasts
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 spray cooking spray
- 1 cup white rice
- 1 cup water
BBQ Chicken Strip Instructions
- Cut chicken breasts into 1-inch strips.
- Spray a nonstick skillet with pan spray.
- Coat chicken with seasonings
- Place chicken in the skillet and cook until the chicken begins to brown (5-7 minutes each side) internal temp should reach 165 degrees
- Place the chicken in a bowl and coat with BBQ sauce.
- In your Instant Pot, add 1 cup of water and 1 cup of rice.
- Pressure cook on high for 5 minutes
- Natural release for 10-15 minutes
- Fluff rice with a fork.
