Instant Pot Saucy Chicken and Rice

Ingredients

  • 1 cup of water
  • 4 frozen chicken breasts (boneless, skinless)
  • ¼ cup Worcestershire sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons apple cider vinegar
  • 1 garlic clove, minced or 2 tablespoons garlic powder
  • 2 tablespoons smoked paprika
  • 1 teaspoon crushed red pepper (optional)
  • 1 1/2 cups cooked brown rice

Instructions

  1. Pour water, chicken, worcestershire sauce, soy sauce, apple cider vinegar, garlic, smoked paprika, and crushed red pepper in Instant Pot.
  2. Pressure cook for 10 minutes.
  3. Save the juice!!
  4. Quick release and remove chicken breast from pot
  5. Place chicken on a bed of cooked brown rice
  6. Strain the juice to remove excess chicken fat
  7. Pour a small amount of the juice on the chicken and enjoy.

Notes

Use cauliflower rice to make this recipe ZERO BLUE Points.
